This recipe was devised by The Hutton Junction’s Head Chef David White, who has created a tasty, warming Sausage Cobbler using sausages (from Oliver’s Butchers) marinated in Brentwood Brewery’s Lumberjack beer. Sausage Cobbler with Brentwood Lumberjack Beer 5.2% ABV (serves 4)
8 x good quality, old-style English Sausages (try your local butcher)
1 bottle of Brentwood Brewing Company’s Lumberjack beer
1 onion chopped
3 celery sticks thinly sliced
6 medium sized carrots chopped
1 turnip diced (or swede if you cannot find a turnip)
250g mushrooms
420g tin baked beans in tomato sauce
400g tin chopped tomatoes
Thyme
Method:
Marinate sausages in Lumberjack beer overnight. Drain the sausages, reserving the beer. Fry sausages to brown all over. Add chopped onion and vegetables and fry until soft. Add thyme, chopped tomatoes and beer. Put in large, covered casserole dish in pre-heated oven 180 C or Gas 4 and cook for one and a half hours.
In the meantime make:
Herby Cobbler Scone Topping (serves 4)
250g self raising flour
pinch salt
50g butter
150ml milk
mixed herbs
grated cheese
Method
Add salt to flour and rub in butter until it resembles fine breadcrumbs. Stir in herbs. Add milk to form dough. Flatten out with palm of hand or roll out on floured surface to approximately half an inch thick and cut into 8 medium-sized scone rounds.
When the casserole has been cooking for one and a half hours, remove and add the baked beans. Add salt and pepper, according to taste. Place the Herby Cobbler Scones on top of the sausage casserole. Scatter a handful of grated cheese over the scones. Bake for 20 – 30 minutes until risen and golden brown.
